Mid-day Snack - Pumpkin Muffins



Sometimes I get in the mood to bake, yesterday was Snickerdoodles, today was Pumpkin Muffins! Here's the Recipe from Betty Crocker's Bisquick Cookbook.

2 cups Bisquick baking mix
1/4 cup sugar ( next time I will use 1/2 cup)
1/2 tsp nutmeg
1/2 tsp cinnamon
1/ tsp ginger
1 egg
1/2 cup canned pumpkin
1/2 cup milk
Heat oven to 400 degrees
Mix all ingredients; beat for about a minute.
Fill 12 greased medium muffin cups or paper-lined muffin cup 2/3 full.
Bake for 15 minutes or until golden brown. Makes 1 dozen.

Oh and sprinkle a few chocolate chips on top so the kids will be sure to eat them!!
